Abstract:
Anemia is a global issue affecting 2 billion people. Over 52% of pregnant women suffer from anemia. Scientists' bigger concern is iron bioavailability and gastrointestinal side effects. A promising approach for anemia treatment is the utilization of iron oxide nanoparticles. We will empower the iron oxide nanoparticles with probiotics from Lactobacillus and Bifidobacterium species, leading to a reduction of gastrointestinal discomfort, an increase in iron absorption and reduced problems pose of toxicity.
Our overall objective is to design, develop and test an innovative probiotic (Lactobacillus and Bifidobacteria) carrier iron oxide nanoparticles suitable for i) anemia treatment with ii) minimum side effects (no cytotoxicity) that sustain iii) optimum iron absorption mechanism and iv) ensure the gut microbiota health, in order to maximize their impact. Specific objectives will be achieved through seven work packages (WP1-7):

Abstract:
The aim of the project is to develop a functional collaboration model between public research organizations and the economic environment in order to provide high-level scientific and technological services in the field of bioeconomics. The objectives of the project are: O1: Creation of a consortium between public research organizations (USAMV, SCDA TURDA, UBB, UTCN) and the economic environment; O2: Increasing institutional capacity through scientific and technological services, through human resources expertise to improve institutional performance; O3: Increasing the institutional capacity to capitalize on the results of the research, by the functioning of the technological transfer component to the economic environment, by publishing and invention patents; O4: Reduction of 30% sugar addition in fermented foods and obtaining a consortium of atomized lactic bacteria. These general objectives are based on the following scientific objectives: Os1: Cultivation of 3 soybean varieties in 3 systems of soil cultivation and characterization of soybean chemical profile; Os2: Evaluation of the toxicological impact of nanoparticles in soybean and the development of a biosensor to identify titanium, zinc and gold nanoparticles accumulated in the plant and grain; Os3: Selection of lactic bacteria and optimization of fermentative processes on soybean and wheat substrate, by mathematical modeling, for the production of polyols to reduce sugar addition in food; Os4: Microinjection of the consortium of lactic bacteria by atomization, envelope aseptic packaging for industrialization; Os5: Educational program on nutrition with soy products, based in the community.The main impact of this proposal is reflected by the creation of new jobs for researchers, sustainable and after the completion of the project, by expertise the human resources and by training the young researchers in modern techniques for the re-launch of SCDA Turda.

Abstract:
A growing interest exists in the development of new value chains based on protein-rich deboning residues from the meat and poultry industry. Herein, enzymatic hydrolysis is an attractive refinement process to achieve new products with market potential, but its breakthrough is prevented by the lack of suitable commercial enzymes able to access the recalcitrant bone components. Driven by industrial demands, the ProBone project focuses on streamlining discovery of valuable bone hydrolytic enzymes, by selectively prospecting the unique genes and proteins of the non-cultivable marine bone-degrading microbiome. Despite its resilience, bones are degraded by free-living bacteria as well as symbiotic microorganisms associated to bone-thriving invertebrates in the marine environment. This bone-degrading microbiome is, however, largely unexplored for its biotechnological potential. ProBone aims at delivering an innovative toolbox based on omics technologies and synthetic biology methods, to expedite discovery of active bone-degrading enzymes, and to accelerate the transition from discovery to end-user applications. An international consortium with recognized scientists of complementary expertise in marine biology, microbiology, bioinformatics and biochemistry, will apply and develop a refined computational workflow for gene discovery as well as ground-breaking improvements in recombinant expression and activity assessment. These developments are key to identify tailored enzymes for the emerging bio-based economy.

Abstract:
The innovative idea of NONACT is the development of a spryable polyvinyl alcohol (PVAP) polymeric matrix composed by food additives and loaded with natural compounds having both antimicrobial and nutraceutical properties derived from various plants, animals and microorganisms as natural antimicrobial coating for food industry and packaging. The development of natural surface treatments for preventing microbial contamination across the supply and production chain in the food industry, especially in the food processing and packaging, satisfies both the needs for reducing outbreaks of foodborne diseases, due to pathogencontaminated food, and consumer demand for foods containing reduced levels of chemicallysynthesized food additives. Food antimicrobial coating market in nonhealthcare markets is about US$225 million going on to reach US$500 million by the 2022. NONACT consortium covers all the requested competences to fulfill the project goals (up to TRL6). In fact, it integrates knowledge from academic partners, with relevant track records on materials development and decades of experience in food analysis, processing and packaging from agrifood SMEs.

Abstract:
The objective of this project is the holistic approach for the utilization of tomato processing byproducts.
These wastes could be considered valuable by-products if the appropriate technical means, in
terms of economic impact, is used and if the value of the subsequent products is expected to exceed the cost of reprocessing. The cultivation and processing of tomatoes is the largest agricultural business in Southern European countries. Every year millions of tons of tomatoes are used and large amounts of tomato byproducts are treated as waste. These waste quantities from tomato processing industry constitute an important ecological and also financial problem. The current applying practices, regarding the treatment of tomato processing by-products, include mainly the usage as animal feed and / or disposal. However, being a rich source of natural bioactive compounds, tomato waste will be utilizing to produce high value-added products for food, cosmetics, or pharmaceutical applications along with new food formulations and improved animal feed and organic fertilizers.

Abstract:
Oral squamous cell carcinoma represents a major global health problem due to its high incidence (2% - 3% of all malignancies), association with 5-year survival rate below 50% and a relatively high risk of relapse. Risk factors can induce DNA damage and alter the expression of various gene products implicated in defensive or reparative processes such as apoptosis, genomic repair and cell growth arrest directly or by reactive oxygen species. Consequently, it can drive genomic instability, disruption of cell signaling pathways, events that can lead to neoplastic transformation and ultimately carcinogenesis. Accordingly, development of early detection and preventive strategies is essential.
In our study we aim to evaluate in vitro and in vivo effects of silver nanoparticles functionalized with natural extracts derived from Sambucus nigra (SN) and Cornus mas (CM). In order to validate the nanochemopreventive potential of new hybrid biomaterials we estimate the effect on oral dysplastic keratinocytes and oral chemically-induced carcinogenesis in Sprague-Dawley rats by evaluating the gene expression profile (p53, WNT and PI3K-AKT signaling pathways), metabolic and epigenetic mechanisms, using cDNA microarray technology and real-time polymerase chain reaction (PCR-RT). In vitro and in vivo validation of qRT-PCR data are performed by evaluation of protein expression profile using western blot. Also, by histopathological examinations we identify key molecules and signaling pathways involved in chemoprevention. In order to detect cancer cell through their mechanical properties we use atomic force microscopy.
The project put forward, using cutting edge research, brings new scientific insight regarding protection at a molecular level using hibrid materials prepared from silver nanoparticles and natural products, and offers scientific viable solutions for nanochemoprevention.

Abstract:
Childhood obesity has entered an upward trend in Romania. Surprisingly or not, figures show that one in three children has problems with weight.
Starting from the above-mentioned ideas and the increasing demand for parental nutrition-based menus, Triox aims to develop collaboration with medical, food and computer science specialists. The collaboration between Triox Catring and the specialists from the two Cluj Universities aims to create the theoretical and practical basis to implement the concept of healthy menus for preschool children with an impact on the healthy adult.
The project aims to create high nutritional menus proposed by a nutritionist and a diabetologist, these will be done and analyzed by the members of the Faculty of Food Science and Technology and these menus will be made available to parents with the help of MySQL software after which it will be generated.
The purpose of the project is to formulate and / or reformulate child-based menus and create a database to provide parents with these menus combining them according to their needs and preferences. Thus, the following objectives and activities have been proposed:

O III. Making database through MySQL workbench software.
Awareness of the risk that over-nutrition and processed foods are through the intake of salt, sugar, fats, saturated fat and trans, polyphosphates, nitrites and calories - on health will increase the demand for personalized menus and nutrition information on restaurant and catering meals offered to the public in the near future.

Abstract:
Biodiesel represents an alternative for the substitution of fossil fuels but generates a huge amount of crude glycerol which causing the environmental problems regarding the management of this waste. A solution to reduce the negative environmental problems and the cost of biodiesel is to use crude glycerol as a carbon source for Rhizopus oryzae growth in order to produce L-lactic acid. The project aims are to develop and validate the improvement production of L-lactic acid using crude glycerol as a substrate, immobilized spores, and inhibitors for alcohol dehydrogenase of R. oryzae in discontinuous and semicontinuous fermentation processes in order to make the process more efficient.Our preliminary results, generated (Vodnar et al., 2013) sustainable opportunities for L (+) lactic acid production via pelletized R. oryzae NRRL 395 fermentation on biodiesel crude glycerol.The objectives are well - correlated with the outcome of the projects and are as follows:O1: Immobilization of R.oryzae spores in polyvinyl alcohol cryogel O2: ADH inhibited R.oryzae capacity to produce L-lactic acid from crude glycerol during discontinuous fermentation (flask and small bioreactor) O3: ADH inhibited R.oryzae capacity to produce L-lactic acid from crude glycerol during semicontinuous fermentation (flask and small bioreactor) O4: Optimization of the L-lactic acid production conditions using a fractional order mathematical model. The BioFit system proposed starts from TRL 3 where the previous experiments demonstrated the concept functionality through significant results, and will move to TRL 4, more precise to the validation of the improvements added to the existing system using mathematic model. The use of crude glycerol from biodiesel production present a great opportunity for lactic acid production in order to defray the production cost of biodiesel and to promote the biodiesel industrialization on a large scale.

Abstract:
The project proposal is for obtaining a gluten free muffin, low in calorie, enriched with essential aminoacids from vegetable source (Moringa oleifera). This product is ment to lead to a higher number of costumers for the beneficiary of this project (Mit Serv SRL). The beneficiary is operating under its brand Saveur and is preparing pastry. The objectives of this project can be summarized as follows:
O.1. Obtaining flour mix, coconut and green banana toghether with Moringa oleifera powder and test their baking behavior. A study which include organoleptic analysis of the three best mixes will be done.
O.2. Determining the nutritional value of the obtained product, the antioxidant activity of the ingredients and of the the finished product (the extraction of active principles) and the determination of validity term (compared with a control sample - muffin obtained after recipe classical) and noting the physicochemical and sensory changes, likely to occur.
O.3. Implementation, at the beneficiary sites, of the new technological process of obtaining muffins gluten free, low calorie-enriched with vegetable essential amino acids.
O.4. Achieving food safety (HACCP) using the data sheet on the process of obtaining muffins gluten free, low calorie-enriched with vegetable essential amino acids.
Experience of the trader in technology of products of pastry and project implementation team experience in handling and working together to achieve innovative products faster increase company competitiveness through product that is intended to be released.

Abstract:
Obesity is one of the most serious public health issues of the 21st century, and its prevalence has risen to alarming rates in recent years. The obesity epidemic entails an epidemic of diabetes and cardiovascular disease. Weight gain and obesity are increasingly common since childhood, and there is a tendency that children remain obese into adulthood. The growing awareness of the importance of healthy eating and the need for weight control during childhood has increased market demand for healthy menus to control our children weight. In order to diversify catering services with healthy, balanced menus, with increased content of vitamins, minerals, bioactive product, for school children (age group 6-10 years), SPS SIMPEX sought the advice and transfer of know-how of specialists in nutrition and metabolic diseases at the University of Medicine and Pharmacy Cluj-Napoca in collaboration with the Laboratory for Nutrition Molecular and Proteomics at the University of Agricultural Sciences and Veterinary Medicine Cluj-Napoca, for development, innovation and diversification of catering services for children.

Abstract:
The proposed project aims to formulate a hand disinfection gel prototype by capitalizing bioactive compounds from by-products of the brewing industry. Hops (Humulus lupulus L.) is rich in bioactive ingredients: bitter acids, polyphenolic compounds, volatile oils, contributory to antimicrobial effects proved by many scientific studies. Spent hop is a valuable by-product of the brewing industry if we consider that about 85% of the active principles of hops used in the process are included in this by-product and only 15% is recovered in beer, due to the low solubility of hops in the wort. In this context spent hop capitalization it is important both economically, but also environmentally friendly. To achieve the aim of the project, have been set the following objectives: (i) development of experimental model of technology for obtaining volatile oil and phenolic extract from spent hops, (ii) functional characterization of volatile oil and phenolic extract (iii) evaluation of antimicrobial activity of the proposed formula and (iv) formulation of a hand sanitizer gel prototype, oil-based and phenolic extract of hops with potential applications in cosmetics and hygiene. The hydro-alcoholic product provides disinfecting and maintaining hand hygiene evaporates quickly and does not require rinsing, intended for professional use in the catering industry, food industry and generally, in areas of work that require strict hygiene staff.

FUTUREMEN urmărește reformularea meniurilor oferite de Exclusiv catering prin introducerea ingredientelor de origine vegetală (legume, fructe, plante, salate, condimente, uleiuri vegetale presate la rece, etc) care sunt benefice pentru organism, precum și scăderea conținutului de sare, zahăr, grăsimi saturate și grăsimi trans și a valorii energetice a produselor. De asemena reformulările urmăresc obținerea de meniuri cu un grad crescut de sațietate și o densitate nutritională ridicată. În cadrul proiectului va fi implementat sistemul de etichetare nutrițională a meniurilor “traffic light”.

Abstract:
The work hypothesis of this project is based on the central role of the eco-innovation in the promotion of the industry competitiveness as source of social welfare. Eco-innovation is defined by the European Commission as being «any form of innovation aiming at significant and demonstrable progress towards the goal of sustainable development, by reducing the environmental impact of the economy or achieving a more efficient and responsible use of natural resources». The project ECO-ZONAR aims to contribute, through its specific activities and outcomes, to a better use of resources and to stimulate the competitiveness by using the animal by-products (Whey) in the production of a nutraceutical product with curative and palliative properties, used in various fields of medicine. Through the functional product obtained (Eco-Zonar), the project will contribute to a more efficient and rational use of resources, by converting an animal byproduct into a source of benefits for human health. The ECO-ZONAR will be obtained by using some eco-innovative technologies from whey (Zonar) enriched with bioactive principles extracted from Zingiber officinalis and polyflower honey. The curative and palliative properties of the product will be tested on different in vivo experimental models (detoxifying, antioxidant, hypoglycemic, anti-inflammatory, anti-proliferative) performed on the laboratory rats and mice. The research outcomes will stimulate the exploitation of the green industry, through generating eco-innovation, competitiveness, preservation of the resources, and implicitly will create new jobs. The nutraceutical product developed will be a valuable source of curative and palliative benefits for human health. The necessity identified in EMBRYOM SRL comes from the fact that the Eco-Zonar requires, to be implemented on national/EU market, to performing some rigurous controlled experiments in order to validate the scientific properties of its bioactive principles, respectively their functional synergism on different in vivo models.

Abstract:
In the last decades consumer demands in the field of food production has changed considerably. Consumers more and more believe that foods contribute directly to their health. Functional foods represent one of the most interesting areas of research and innovation in the food industry.
The aim of FOOD-PROFIT is to develop a new generation of probiotic functional beverages using agro-food waste, microencapsulated/granulated bacteria, bottling into controlled release bottles. Microcapsules/granules containing probiotics bacteria will be stored into bottle cap until consumption of beverage, when consumer must to push the bottle cap and the beads with bacteria or bacteria granules will be released into the juice mass. In vivo clinical investigations will be carried out in order to evaluate the beverages functionality on healthy human subjects and patients with gastrointestinal diseases. Thus, will be designed innovative functional probiotics beverages with impact on gastrointestinal health, increasing the innovation rate in this area, stimulating new beverage opportunities and taking away barriers for the transfer of knowledge to real innovation.
The strategic objectives of FOOD PROFIT project are: (a)Characterization of agro-food waste (apple, sugar beet, orange and grape) using advanced techniques (HPLC-MS, GC-MS, FTIR, UV-Vis) and cultivation, granulation, microencapsulation of probiotic bacteria (L. casei, L. plantarum, B. infantis, B. breve), (b)Development of different variants of beverages with microcapsules containing bacteria/ granulated bacteria and the optimal ratio between agro-food wastes (c) In vivo clinical investigation of probiotic beverages functionality and their effects on human gastrointestinal diseases.
FOOD-PROFIT is considered to be a strategic project for development of new concepts and products that, once transferred to the industry, will enable the European food industry to compete and take back the lead in the highly competitive global market.

Abstract:
Produsele lactate acide datorită caracteristicilor senzoriale, a compoziţiei fizico-chimice şi microbiologice cu potenţial în menţinerea şi îmbunătăţirea stării de sănătate, constituie obiectul a numeroase studii, care au demonstrat impactul benefic asupra sănătăţii consumatorului. Pornind de la faptul ca societatea comercială SC Bonas SRL are ca şi activitate de bază fabricarea produselor lactate şi a brânzeturilor, scopul acestui proiect este de a obţine un sortiment nou de iaurt cu fructe goji si caracterizarea acestui produs pe parcursul perioadei de valabilitate. Fructele goji sunt cunoscute ca un ”tonic de sănătate” datorită aportului de vitamine (A – beta caroten, B1, B2 si B6, E şi C), polizaharide (Lycium barbarum) ,proteine, aminoacizi (18 aminoacizi) şi fitonutrienti cu rol antioxidant (luteina si zeaxantina). Prin adăugarea fructelor goji se aduce iaurtului un plus nutriţional de aminoacizi esenţiali şi vitamine, necesare menţinerii lactobacililor la concentraţia de 10 E6-10 E7 ufc/g, optimă pentru un produs probiotic. Astfel sunt propuse următoarele obiective:
►Determinarea potenţialului antioxidant, conţinutului in proteine şi aminoacizi al fructelor goji;
►Încercări pentru optimizarea procentului de fructe goji în produsul finit;
►Studiul acţiunii microflorei de poluare pe perioada depozitării produsului finit; (influenta asupra concentratiei viabilitatii culturilor, parametrilor senzoriali, nutritionali si calitativi);
►Determinarea cantitativă a lactobacililor (Lactobacillus bulgaricus şi Streptocuccus termophilus) şi a conţinutului în aminoacizi pe perioada valabilităţii;
►Evaluarea senzorială a produsului finit.
Metodele folosite sunt spectofotometrice pentru determinarea potenţialului antioxidant, metode gazcromatografice prin GC-MS pentru determinarea conţinutului în aminoacizi, metoda Kjeldahl pentru determinarea proteinelor, şi metode microbiologice standardizate pentru studiul microflorei de poluare şi a conţinutului în lactobacili.
